We present a simplified take on a beverage found on a new cocktail list. This is a batch prepared mix which is loaded with flavours associated with festive period, making it excellent for your festive gathering. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or for another batch of bikinis.

Serves 10 servings
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Making the Cordial: Put the listed items into a saucepan, bring to a gentle boil, mixing to dissolve. Then, remove from the stove and let it to cool fully. Pour into an sterilised bottle, seal and refrigerate it in the fridge, where it will keep for up to four weeks.
To make Batch Mix: Pour all the spirits and syrup into a large bottle, let it rest for 60 minutes, then filter it best through muslin, making it completely strained.
For serving: Add 85ml from the batch mix to a cocktail shaker containing ice, and stir lightly for one minute until cold. Strain into a cold coupe glass or a similar vessel, top with some cranberries and finish by giving it a quick spritz of mandarin oil above the glass.
